Winemaker Brendon Keys (BK) spent time learning from masters in NZ, Argentina and California before deciding to set up in the Adelaide Hills in 2007. Loving the fact that there's few preconceived notions about what wines to expect from here, BK loves exploring creative aspects of winemaking with every vintage. This is a unique take on a 100% Grüner Veltliner (a variety originating in Austria) that manages to be smashable and complex at the same time. BK had this to say about it: "Ovum – so named for our concrete egg-shaped fermenter – is floral, fresh and spiced opening to plush ripe rockmelons. Whole bunches and skin fermentation and a conscious decision not to release early ensure layers of weight and texture, similar to how we would handle a Chardonnay. Drink with something (or someone) rich and sumptuous." So good!
