After spending time as a Sommelier in Tokyo and Sydney, Jean-Baptiste Courdesses headed to South Australia, spending time on wineries in Mount Gambier and the Adelaide Hills, learning and honing his craft. This organically farmed Pinot Gris is from a beautiful vineyard just outside of Hahndorf in the Adelaide Hills. It's been put through carbonic maceration and then foot-stomped and sealed up in stainless steal for 3 months before pressing into French oak barrels for 7 months. No sulphites and no filtration used. This is an earthy Pinot Gris with notes of pear skin and spiced pear with pickled daikon. The Ronin is one for the lovers of something a bit wild!
