Jean-Baptiste Courdesses, or 'JB' as he's often known, started making wines under the Jean Bouteille name after working with such wineries as Limus and Gentle Folk. These vintages honing his craft, as well as his stints as a Sommelier in Tokyo and Sydney, have given JB a pretty unique perspective on Winemaking! This Semillon is from an organic vineyard in Vine Vale, a sub-region on the Eastern side of the Barossa Valley. Whole bunches went through carbonic maceration for a week before being foot-stomped and sealed away for 3 months before pressing into French Oak. It's full of flavour and aroma, showing beeswax, candy, pineapple, dried apricot skin and curry leaf. A beautiful example of skin contact semillon from this unique producer!
