- Yeah we know, this combination sounds a little scary-heavy. Gosh it isn't though! The merlot sees a month on skins, while the shiraz is whole-bunch pressed. For those of you who are not absolute wine-nerds, it means that this wine is left light & bright and full of a lifted-crunchy tannin! From our own experience we recommend letting this wine breath (or even stretching him over a couple of days) to really see it change from a young, green, tight wine; to something a little more plush in character...
