Giles Lapalus is from third generation wine-making family hailing from the Cluny region of Burgundy (not some town in Australia with a coincidental name; the actual Burgundy). His career in the wine industry has taken him through the regions of Burgundy and into Languedoc, Medoc and Beaujolais, then internationally to Tuscany, Campania, Chile and finally Australia. “Sparkling rose methode ancestrale, from Heathcote Syrah, Nebbiolo, handpicked in mid-February, co-pressed and fermented naturally with 10 days on Fiano, Greco and Arinto skins. Bottled in early March, disgorged in October after 8 months on lees, zero addition, no sulphite added. Vin de soif.” Winemaker Gilles Lapalus.
